When I was a little girl, my mom had this cookbook, the I Hate To Cook Cookbook
by Peg Bracken, and it only opened on one page: The Cockeyed-Cake Recipe. It was the only chocolate cake recipe I've ever really loved, it was family staple at my childhood home, and now my own variation is a constant in my own household.
Which is great, because today is National Chocolate Cake Day. Seriously. There is a whole day dedicated to Chocolate Cake. So in honor of this very noble day, we begin our series, "Food for Families" where you will find easy, delicious recipes to comfort your body and soul before, during and after pregnancy, or have your Postpartum Doula prepare for you. Because whose soul isn't nourished by a delicious piece of tasty cake?
Easiest/Best Chocolate Cake, EVER!
1 1/2 c. flour
1/2 c. sugar
1/3 c. cocoa
1 tsp. baking soda
1 tbsp. vinegar
1 tsp. vanilla
1 c. cold water
5 tbsp. salad oil
Pre-heat oven to 325 degrees. Prepare 8" square or circular pan. Stir together the dry ingredients, then add all wet ingredients. Then stir until blended ans most of the lumps are gone. Pour into prepared pan and bake 30-35 minutes, until a toothpick comes out clean in the center. Let cool, then frost with your favorite frosting, or sprinkle powdered sugar on for a simple treat.
